Can I "unshare" a list?

No, shared lists are not "owned" by a particular user. You can remove yourself from a list by deleting it from your device, but other list users will still have access to the list.

How are password-protected lists secured?

Password protected lists are secured with military-grade 256-bit AES encryption. Your password is used to generated an encryption key for the list via the PBKDF2 key derivation function with 50000 rounds. Each list item is then encrypted using the generated encryption key together with a randomly-generated salt value unique to each item.
